Hasselback Red Potatoes Recipe

Preheat the oven to 200°C, fan 180°C. Wash the potatoes. Carefully make small vertical slits, 3mm apart, three quarters of the way down each potato. Repeat with remaining potatoes. Add oil, butter and 3 tablespoons Italian Herb Mix to potatoes. Season with salt and pepper and toss to combine. Place in a roasting pan and roast for 45 minutes, until golden and crispy around the edges. Sprinkle with remaining Italian Herb Mix for decoration and to taste
