What a splendid dish this is! It’s a fast and easy roasted eggplant recipe, and a visual feast too

1. Grab each small to medium eggplant in half  2. Cut each eggplant in Criss/Cross (be careful not to cut thru the skin) 3. Drizzle olive oil, sprinkle Equagold Italian Blend and Roast for about 20mins on 180

  • Half an eggplant per person
  • Refrigerates well
  • Serve with Spanish Flaked Salt in small sharing dish
