Ingredients
- 2 Medium or Small Size eggplant
- 2 tsp Equagold Italian Blend
- Olive Oil
Method
1. Grab each small to medium eggplant in half 2. Cut each eggplant in Criss/Cross (be careful not to cut thru the skin) 3. Drizzle olive oil, sprinkle Equagold Italian Blend and Roast for about 20mins on 180
- Half an eggplant per person
- Refrigerates well
- Serve with Spanish Flaked Salt in small sharing dish
