Vanilla & Saffron Mayonnaise

- Generous Pinch of Equagold Pure Saffron
- 1 ½ tbsp hot water
- Prepare the Vanilla Mayonnaise as in the separate specific Vanilla Mayonnaise recipe
The first thing to do is to soak the Saffron threads, and because Saffron is expensive, you will want to extract as all the flavour and colour that is available in the threads. So we recommend at least 12 hours for this. Pour the hot water over the Saffron thread in a small cup and allow to infuse for at least 12 hours. Blend the infusion into the Vanilla Mayonnaise. This is wonderful over fish, Salmon or chicken salads. This is also lovely served with some smoked Salmon on crackers, with a small dollop of the Saffron Mayonnaise.
