Chocolate Shortbread Cookies
Create your very own endless variations, add chopped chocolate and nuts, top with melted chocolate, serve with ice-cream

Ingredients
- 1⁄4 cup unsalted butter softened
- 1⁄4 teaspoon vanilla extract
- 1⁄2 cup all purpose flour
- 1⁄4 cup vanilla sugar
- 3 tablespoon Equagold Dutch Cocoa
Method
- Mix the butter and vanilla sugar together with a wooden spoon. Stir in the flour and dutch cocoa. Halve the dough and roll each piece into a log about 5cm thick. Wrap in cling film and chill in fridge for 1 hr (or many days) This mixture can be frozen for up to 1 month.
- Heat oven to 180C/160C fan/gas 4. Slice logs into 1cm-thick rounds, transfer to a baking tray lined with baking parchment and bake for 10-12 mins. Cool on the tray.
- Decorate and serve with White chocolate ganache and fresh strawberries/cherries
