Instant Active Dried Yeast 500g

The Bakels Instant Active dried Yeast is the best type of dry yeast you can buy, hence it is used by many of the smaller bread bakeries, in-store bakeries and home-bakers.

 

As the name describes, this yeast is instant, so no pre-soaking or pre-fermenting is required. I can be added straight to the flour.

TIPS:

We recommend that you stir the Bakels yeast for a couple of seconds with a spoon through the flour, before added the water.

 

One Teaspoon is approximately 3 grams. We suggest that you use about 15 grams of our Instant Yeast per 1 kg of flour (so 5 teaspoons) or 7.5 grams (1.5 teaspoons) per 500g flour.

One Tea-spoon is approximately 3 grams. We suggest that you use about 15 grams of our Instant Yeast per 1 kg of flour (so 5 teaspoons) or 7.5 grams (1.5 teaspoons) per 500g flour.

 

As you probably know, you have to use luke-warm water (about body temperature) and the dough temperature should be around 30 degrees Celsius after mixing for the yeast to produce carbon dioxide and rise the dough.

NOTES FROM SUPPLIER:

Bakels Instant Active dry Yeast is suitable for any bread maker. However, please note that Bakels yeast is a professional dry yeast, used by many small and medium size bakeries and instore bakeries, therefore does not contain any bread improver. Most of the homebaker’s Dry yeasts available in supermarkets contain bread improvers.

As you can see on bread packaging ingredient listings, all bread bakeries in NZ use bread improvers or bread concentrates with our Instant yeast or fresh yeast.

Bread improvers provide dough strength and prevent dough collapse during proofing and baking. To achieve quality bread, bread improvers are essential.

The following might improve the bread quality a little if you can’t get hold of some bread improver: Try to find a high grade flour, add some dry gluten flour (5% on flour weight) and add about 10% table spread. When adding table spread you have to reduce the water level by 5% in flour weight. Or perhaps better, instead of the table spread, purchase our Gold Label bakers blend (margarine) from the supermarket (normally in the Baking mix isle – in plastic tubs). This will strengthen the dough a little bit more, although this is not the answer. Use our Baker blend at 6% on flour, so approximately 30 grams per 450-500g flour.

The dosage of our instant yeast is about 4  teaspoons per 1 kg flour or 2 teaspoons per 450 – 500g flour (2 cups).
